2 cups dried green split peas, rinsed
2 1/2 cups water, more or less
salt and pepper and butter
Put the peas and water in a kettle with a lid. Add a little salt, and
bring to a boil, stirring. Simmer, covered, until peas turn soft and
mushy, about 1 hour. More water may be added if needed. Stir often.
When a nice consistency is reached, add butter, salt, and pepper to
